Par cooked vegetables make a wonderful snack and they make dinner come together much more easily!

Bring 1/2-1” water to a boil and lightly salt it. Add vegetables so that 2/3 of them are submerged. Keep the flame high so it comes back to a boil as soon as possible. Cook beans 1-5 minutes depending on your taste and use.

Put cooked vegetables in a colander, spread on a tray or in a large bowl with ice cubes to cool. Drain as soon as they are cool and pat dry with linen dish towels or cloth napkins.They are ready to eat as a snack, use in appetizer platters, add to salads, or saute with other ingredients.
